POSCA

As noted above, posca is similar to oxymel but with added herbs/spices and diluted with water for a refreshing daily drink. Especially refreshing for recovery from strenuous work and full of living nutrition, this makes a terrific alternative to sports drinks. Add a dash of high quality Himalayan or Celtic sea salt to boost electrolytes. 

Suggested flowers/herbs/spices: cardamom, cayenne (a pinch or two), cinnamon, elderflower, ginger, lavender, lemon balm, oregano, peppermint, rose petals, rosemary, thyme

If using fresh herbs, bruise the leaves to release the essential oils. Use twice as much fresh herbs as dried for comparable flavor. 

Yield 1/3 of a gallon

Supplies

  • 1 ½ cups of Apple Cider Vinegar (see recipe p.22)
  • ½ cup of raw honey
  • 1 tablespoon spice or dried herb (2 TB if using fresh)
  • 4 cups of water

Recipe

  1. Heat water to boiling and turn off. 
  2. Allow the water to cool for 3 minutes.
  3. Combine water and honey in a crackproof vessel and stir to dissolve.
  4. Add vinegar and coriander seeds and allow to cool completely.
  5. Once cool, strain out leaves or pieces and enjoy
  6. Store in the fridge where it will last indefinitely, but the flavor will continue to change. 
  7. If the flavor is too intense, dilute with filtered or spring water. Can use mineral or soda water for a bubbly beverage.
