- Grains do not need to be rinsed between uses and doing so may remove organisms that keep them healthy.
- Grains do not always reproduce every batch but may be used again and again.
- If left longer than 72 hours, grains are at risk for starvation and may disappear.
- To test if grains are fermenting properly, add a couple of raisins. If they float, the fermentation is working, if not, then time to get new grains.
- To scale up, use the ratio of 2 Tb of Kefir Grains per 4 cups of sugar water though many grains may be stored together if desired.

Any combination will work but lemon and ginger combined make for a fantastic beverage that is naturally thirst quenching, plus ginger soothes the tummy and helps with digestion. Add a pinch of cayenne to boost circulation and reduce inflammation post workout.
Tips to Avoid Explosions
- CO2 is a gas and if too much pressure builds, it can cause an exploding bottle or liquid can shoot forth uncontrollably.
- Store bottles in temperature controlled room or area (60°F is ideal).
- Store bottles in a box or cooler so that should an explosion occur, the mess is contained and nobody can get hurt.
- Burp bottles to reduce built up carbonation – CAUTION over burping will dissipate all of your fizz, so pay attention to the bottles – look for bubble or listen for a hissing noise (sound of gas building up)
