Dark & Devoted Kombucha Cocktail

A Dark Rum & Ginger Kombucha Cocktail Inspired By Culture Shock Café

Dark rum. Fresh ginger. Tart Kombucha. Lime. 🥃🫚🍋

The Dark & Devoted Kombucha Cocktail is Culture Shock’s fermentation-forward riff on the classic Dark & Stormy, blending the warming depth of dark rum with the bright bite of ginger Kombucha.

Sweet. Tart. Slightly spicy. Refreshing.

Where a traditional Dark & Stormy leans heavily on ginger beer, this version swaps in ginger Kombucha, adding acidity, light carbonation, and the layered complexity only fermentation can bring.

Originally served at the now closed (but very fondly remembered) fermentation café Culture Shock in Ithaca, NY, this drink quickly became one of the café’s signature Kombucha Kocktails and remains one of our favorite ways to pair booch with spirits.

Why Kombucha Works In Rum Cocktails

Dark rum naturally carries notes of:

  • Molasses
  • Caramel
  • Spice
  • Oak
  • Vanilla

Ginger Kombucha cuts through those richer flavors with brightness and acidity while enhancing the warming spice notes already present in the drink.

The result lands somewhere between:

Dark & Stormy × Moscow Mule × fermented ginger tonic

Which is admittedly a very strange family tree, but it works beautifully and is aways a hit among Kombucha lovers and those who aren’t familiar with the ferment alike.

Flavor Profile

Dark & Devoted is:

  • Warming from dark rum
  • Bright and gingery
  • Lightly tart
  • Slightly sweet
  • Crisp and refreshing despite its richer base spirit

The ginger keeps everything lifted while the Kombucha prevents the cocktail from becoming heavy.

Choosing The Best Kombucha

This recipe shines with:

  • Ginger Kombucha
  • Ginger Lemon Kombucha
  • Ginger Lime Kombucha
  • Ginger Jun Tea
  • Extra dry ginger-forward homebrew

A stronger, more fermented ginger profile generally performs better than sweeter commercial versions. We always recommend brewing your own Kombucha or Jun Tea to get the very best flavor results without all the added extras in commercial Kombucha.

Skip the rum and increase the ginger Kombucha.

You can also add:

  • Sparkling water
  • Extra lime
  • Fresh ginger juice

The result becomes a spicy fermented ginger refresher with surprisingly satisfying body.
